Just wanted to share a recipe that I came up with that was both easy and delicious! I know there are many versions of fried rice out there but I wanted to share this one specifically because it doesn’t require ingredients that are “exotic” or just not in your pantry, refrigerator, or freezer.
Here is it!
Bacon and Egg Fried Rice:
3 cups cooked rice
1 pack of bacon, cut in small pieces
5 scrambled eggs
1/2 onion, chopped
Soy sauce to taste
1. Cook bacon and reserve enough bacon grease to fry onions. Meanwhile, make the scrambled eggs.
3. Remove bacon and fry the onions in the bacon grease (use as much or as little bacon grease as you want)
4. Add cooked/leftover rice to fried onions.
5. Once rice is warm, add the bacon and scrambled age and soy sauce to taste.
6. Mix everything well.
